Our inaugural vintage of sparkling 'Empress' was made in the méthode traditionnel. A blanc de noirs, pinot noir was picked, gently pressed and fermented in stainless steel. A light prise de mousse was added before being bottled for secondary fermentation. Allowed to age in the bottle sur lies, the wines develop in depth, finesse and complexity prior to being hand disgorged with no liqueur de tirage for a crisp, dry sparkling wine. 1g/L dosage.

Tasting Notes

Upon opening, Empress Sparkling reveals a restrained elegance that blooms when poured into the glass, displaying very fine, elegant bubbles and a silky mousse. Its pale gold hue is enhanced by a brilliant, slightly pearlescent sheen. The nose is crisp and focused, offering hints of honey, brioche, white flowers, and lime. On the palate, it is exquisitely fine, with a graceful yet present structure, embodying poise and finishing with delicate notes of gooseberry and passion fruit.
